He's worked extensively in New Zealand with vintages at Coopers Creek, de Redcliffe and Villa Maria and has also worked in France, Italy, Chile, Australia and the US. Paul and his wife Amy live in Martinborough with their two children Alex and Lydia.
Assistant winemaker probably doesn't accurately convey Phill's importance in the winery. From carrying out all the day-to-day winery work, to repairing pumps, operating heavy machinery and putting up shelves in the office, we couldn't manage without him!
